I can't just choose one thing! I would say fricassee of lambi (conch), acras, crab farci, gratin of christophines, plantains, rice & red beans.
I cook a mean plate of oxtails stew, myself, although I've never had them in the islands.  |

| Some good old fashioned cou cou & flying fish. Actually flying fish alone. Baked or fried I can eat it morning, noon and night. I just can't cook it. |

OK ok ok - I'll make fishcakes and bakes and you do the callaloo...throw in some pelau too. I haven't seen you in a couple years now and haven't had any good trini cooking for a while either so I trying to kill two birds with one stone.

LOL! Well yes, we must link up when I come back to the area. I could make a real good pelau, macaroni pie, and curry potato/channa. But I vegetarian, so i can't eat fishcakes.

Wait - when u turn veggie? It wasn't always so...and I know you aren't hindu. Luv de channa. And yuh know i cud lick up some curry & dahl pouri - is sweet fuh days. In moderation of course. Lil Anonymouse's mother used to kill me with curry: Curry goat, curry chicken, curry crab, curry shrimp, curry fish, curry mango...she curried damn near everything.
I spend too much in Toronto fuh Caribana. I forgot to add Canada to my calling plan and my gawd Mr. Verizon is loving me right now. :shaking head at cel phone bill: |

Where you been? I been vegetarian virtually all my life. Maybe we hung out during my meddling with chicken, but that never stuck. No, not Hindu - I'm SDA.
Have some curry & dahlpouri right here in meh fridge. Since you mother curried plenty, your moderation must be other people's excessive. Ah tort your family Bajan? Since when Bajan people love curry so?
How was Caribana? Never been myself. Poor you and that Verizon bill. You know Verizon has this thing where they give you a special phone to use internationally, and the charge isn't bad at all. They don't tell you that though. You have to go in and request it. |

I think it was during your chicken days but yes I know you're SDA.
Not MY mother, the Da Boy's mother: she's jamaican, Indian family. For me curry was a delicacy - we had it every blue moon. But she? She would curry my corn flakes if I didn't watch it. My poor belly aches just remembering
Caribana nice - the whole city is involved and Canadians are more friendly in general so this lends to a good time. A couple friends and I rode up (yeah I know I know: we mad fuh true - 12 hours up, 18 hours back) and were like local celebrities. Not too often do you see bikes with Maryland tags. The rest of my boys either drove or flew. I rented a big house close to downtown and...well....you know how the song goes: What happens in T-Dot stays in T-Dot
